Bondkakor = Peasant's cookies

(makes about 60 cookies)
  • 200 g butter or margarine
  • 175 g white sugar
  • 1 tbs golden syrup
  • 550 ml all-purpose flour
  • 1 tsp bicarbonate of soda
  • 50 g almonds
Beat butter, sugar and syrup until porous in a bowl.
Mix chopped almonds, flour and bicarbonate, add that to the butter and sugar-mixture.
Take the dough on your baking table, knead it and form two rolls, diameter 4-5 centimetres
Put those in a cool place for some time until hardened, cut into 1/2 centimetre slices,
Put on greased baking sheet and bake in oven 200 C ( 350 F) for about 15 minutes until golden brown

 

Rusks

Mormors julskorpor= Granny’s small Christmas Rusks

(Gives about 100 small buns = 200 rusks)
  • 300 g butter
  • 175 g white sugar
  • 850 g plain white flour (=about 6 american cups)
  • 3 teaspoon baking powder
  • 3 teaspoon of grind cardamon seed
  • 300 ml fat milk (=about ˝ pint)
Stir butter and suger until white smoth and fluffy
add flour, mixed with cardamon and baking powder alternating with the milk.
Make small round buns
bake in hot oven (250°C =450 F)
divide in halves when still warm (use a fork!)
get dry in cool oven 50-75 ° (about 150 F)

My mormor's name was Ingrid Ahlberg (living 1877-1967)
All her life she lived in Stockholm, in that part which is called Norrmalm

"Goda snitt" = Delicious Cuts

(Makes about 80)
  • 200 g butter or margarine
  • 1 dl white or brown sugar
  • 1 egg
  • 5 dl plain white flour
  • 1 teaspoon baking powder
  • 100 g cooking chocolate
  • 1 dl chopped orange peel or mixed peel
  • 1 egg (for glazing)
(dl= decilitre)
Stir butter and suger well
Add one egg and stir some minutes more
Add the chopped chocolate, the peel and the baking powder
Mix with the flour
Roll out the dough to flat bars, glaze with beaten egg
bake in moderate oven (200°C = 400F 10 minutes
cut the lenghts while still hot in pieces appr. 2 cm = 1 inch

These cookies belong to our Christmas coffee table - we bake them each year - but just for Christmas.
