Rhubarb flowers 2000
My Mummy's Rhubarb Cake

  • rhubarb (about 1 1/2 cup of cubes)
  • 2 teaspoons of ginger
  • 100 grammes of butter (or margarin)
  • 200 millilitres of white sugar
  • 1 egg
  • 400 millilitres of all purpose flour
  • 2 teaspoons of baking powder
  • 150 millilitres of milk

  1. peel and cut the rhubarb into small cubes
  2. put the cubes in a bowl and mix with ginger powder
  3. stir butter and sugar white and fluffy
  4. add the egg and the flour mixed with the baking powder
  5. add the milk and at last the rhubarb cubes
  6. put the batter into a greased tin and baked the cake in oven 175°C (325-350F) for ca 45 minutes
  7. tip out the cake and serve lukewarm or cold, with whipped cream or custard or vanilla ice cream
